The Story
The Story
Bekele Yutute farms in Sidamo. He's a producer whose attention to detail has earned multiple Cup of Excellence top‑five placements and a reputation for producing some of the region’s most high scoring coffees.
For this fermentation, Bekele and his team sealed freshly picked cherries in a bag and submerged them in cold stream water for four days, creating a gentle, controlled anaerobic environment. After fermentation, the cherries were dried under shade for 30 days, allowing slow, even dehydration that protects aromatics and builds structure.
The result is a cup that feels both progressive and grounded: wine gums,
florals, plum, and a subtle perfumed lift. It’s an anaerobic that offers clarity, balance, and adventuring complexity. A beautiful example of how innovative processing can elevate already exceptional high‑altitude coffee.
Bekele’s farms in Bensa Woreda sit high on cool, cloud‑covered mountainsides, with Kokose reaching 2,345 masl. These conditions slow cherry maturation and contribute to the depth and nuance found in his coffees. His work with JARC varieties, alongside his brother‑in‑law Samuel, has been recognised repeatedly - including 5th place in the 2021 CoE and 3rd place in the 2024 CoE.
