The Story
The Story
Caramel Crème is grown at Fazenda Água da Torre in Ocauçu, where the Boechat family have grown coffee since 1950. What began with Jacy’s first plantings has grown into a multigenerational project, carried forward today by his great‑grandson, José Olavo, who is expanding the farm’s potential while honouring the family’s roots.
This Yellow Catuai is shaped by the cool, humid climate of Garça, where big swings between day and night temperatures slow fermentation and build natural sweetness. Using a shell‑induced natural process developed and overseen by José Rezende, the coffee dries for 14 days before resting to develop its flavour.
The result is silky, sweet, and expressive — a cup layered with dried fruit, orange blossom, caramel and honeyed florals. It’s a celebration of Southern Brazil’s terroir, family heritage, and a process that rewards precision and patience.
