The Story

Bourbon Ají is one of the most distinctive varieties grown at Quebraditas - small, aromatic cherries with a naturally high sweetness and a bright, spicy edge that makes them perfect for expressive washed processing. For this lot, Edinson applies a thermal shock washed method, using controlled temperature shifts to open the cell structure of the cherry and drive a cleaner, more defined flavour.

It’s a technique he refined during his years overseeing processing programs in Cauca, where he learned how temperature, timing, and disciplined washing can transform a variety’s character. At Quebraditas, those ideas come together with the farm’s altitude, slow maturation, and Edinson’s meticulous approach to fermentation.

The result is a cup that’s vivid and colourful: Fresh orange juice, persimmon and sweet grapefruit. A modern washed profile that shows how Bourbon Ají can be both delicate and intensely expressive when handled with precision.

A coffee shaped by technique, curiosity, and a producer who continues to push washed processing forward.

Our brewing tip: We find that a very coarse grind and a tight ratio (we use 1:12), with very little agitation, produces the best results on pourover.
