The Story
Sweet Passiflora comes from La Reserva, where third‑generation producer Marlon Rojas works alongside his uncles in the hills of Palestina and Pitalito, Huila. After years as a commercial pilot, Marlon returned home to pursue specialty coffee with the same precision and curiosity — blending his family’s farming heritage with his training in cupping, production, and quality.
This special Pink Bourbon lot begins with careful handpicking and a semi‑washed approach, moving through a 24‑hour pre‑fermentation and a 48‑hour anaerobic co‑ferment with fresh passion fruit to deepen its tropical character. Slow drying on raised beds and a careful stabilisation period lock in a profile that’s floral, bright, and dessert‑like, with lavender, plenty of citrus and a balanced sweetness.
It’s a coffee shaped by family, skill, and a producer who chooses to pursue excellence and build something extraordinary.
