The Story
Grown by the Bayter family at El Vergel Estate in Tolima, this decaf begins with carefully selected Red and Yellow Caturra cherries, fermented anaerobically for 48–60 hours to build depth and tropical intensity. Drying starts on raised beds before moving to low‑temperature mechanical dryers, then the coffee rests for 45 days to stabilise.
Decaffeination uses Colombia’s own sugarcane‑derived ethyl acetate - a gentle method that preserves the coffee’s natural aromatics while removing the caffeine. The result is a decaf that feels vibrant, textured, and genuinely exciting to brew.
