The Story
The Story
This is the second iteration of the Sundowner Decaf. And true to what we want the decaf to be, this is another complex and interesting cup.
Popayán sits high in the Cauca region of Colombia, protected by the Andes and shaped by volcanic‑ash soils - conditions that consistently produce sweet, citrus‑leaning coffees. This lot comes from around 75 growers who are part of a long‑running quality program, receiving premiums for exceptional cherry selection and processing.
Decaffeinated using the sugar cane EA method, the coffee is gently steamed, soaked, and washed with ethyl acetate derived from sugar cane - a process that preserves character while enhancing natural sweetness.
We’ve roasted this decaf with espresso in mind: syrupy, chocolate‑leaning, great in milk, and consistently sweet. It also shines as filter thanks to a balanced mandarin and red‑fruit acidity that keeps the cup bright, clean and enjoyable.
