Rosado (Pink Bourbon) thrives at El Jaragual, where Jorge Mira’s mix of forestry and coffee farming creates a landscape that matures fruit slowly and evenly. The cherries here develop a gentle sweetness and a soft, creamy acidity - qualities that respond beautifully to Jorge’s meticulous thermal‑shock washed approach. By shifting temperatures at key stages, he’s able to draw out a brighter, more layered expression of the variety.

The method is shaped by the farm and topography: plantain shade, cool air at 1500 MASL, and Jorge’s attention to how small environmental changes influence flavour. Each step - from long oxidations to yeast‑guided fermentation and the final cold wash - is designed to keep the profile clean, vivid, and fruit‑forward.
