The Story
The Story
Silk Choc comes from Rio Brilhante, a family‑run farm in Minas Gerais operated by the Urban family, now spanning first and second generations. Their 1,755‑hectare estate includes 840 hectares dedicated to coffee production and 566 hectares preserved as protected land, reflecting a long‑term commitment to environmental stewardship. The farm plays a major role in the local economy, employing 87 permanent staff and nearly 200 seasonal workers during peak harvest.
The Urban family cultivates a range of varieties, including Arara and Catuaí, which form the base of this lot. Cherries are machine‑picked and then hand‑sorted to select only the best fruit before being dried on concrete patios for eight days and finished in rotary dryers to ensure consistency and stability.
Rio Brilhante is more than a farm — it’s a business project built around supporting the surrounding community, creating stable employment, and investing in practices that help mitigate climate impact. The result is a smooth, chocolate‑led profile with macadamia richness and a raspberry lift, true to the clarity and sweetness of well‑executed natural processing.
