The Story
This lot comes from Edinson Argote, a producer whose background in cupping and processing has shaped a precise, flavour‑driven approach at his - now renowned - family farm, Quebraditas. For this release, ripe cherries undergo a pineapple co‑fermentation with a selected yeast inoculation, building bright fruit and deep sweetness while keeping the cup clean and structured.
We’ve roasted this coffee to show how a progressive, higher‑intervention process can still be approachable, balanced and delicious across a wide range of brew methods.
Expect cakey sweetness, pineapple, cinnamon, coconut and a long, syrupy finish.
