Why Apricity Exists

Apricity exists because, after nearly a decade in coffee, it became clear that it was time to build something of my own—something defined by the standards, clarity, and perspective I’ve developed through years of hands-on work.

As I wrote in my vision, “I know it is time to create something truly my own… to lead with integrity, to nurture people, and to let coffee be the vehicle through which I make a lasting impact.”

That idea hasn’t changed. It’s simply become practice.

This is a roastery built around that decision: to work with care, to stay close to quality, and to keep people at the centre of everything we do.

Built from experience

My approach has been shaped in cupping rooms,  on roasting days, and through time spent working closely with coffee in its many forms.

Over time, one thing has become consistently clear: clarity changes everything.

Clear communication. Clear expectations. Clear expression in the cup.

Those lessons now sit underneath how Apricity works—quietly, but constantly.

The aim is simple: to roast with intention, and to represent each coffee honestly.

As our vision puts it: “Clarity of origin, balance in flavour, honesty in execution.”

A focus on people

Apricity is built around relationships—producers, cafés, and the people who drink our coffee.

For producers, it means working with coffees we can represent properly, with respect for the work that’s gone into them.

For cafés, it means offering coffees that hold their own in service, and relationships that support their work long-term.

For customers, it means keeping things open and accessible—sharing information clearly, without barriers or excess.

It isn’t transactional. It’s ongoing.

How it should feel

We want Apricity to feel calm, human, and direct.

Whether someone is visiting the roastery, working with us as a café, or brewing a bag at home, the experience should feel consistent—clear, attentive, and committed to quality.

Transparent, quality and kind.

The long view

This is a founder-led roastery with a clear direction.

Growth matters, but only if it stays aligned with the principles it started with.

As we grow, the focus remains the same: to build on relationships along the chain, enhance the work we can do with producers and coffee businesses and to create space for all who love exceptional coffees.

The purpose
