How We Roast

Roasting, for us, is less about transformation and more about translation.
We work with coffees that already carry something worth listening to—shaped by terroir, process, and the people behind them. Our job is to make sure none of that gets lost along the way.
We don’t approach roasting as a fixed style. Some coffees ask for restraint. Others ask for a little more development to bring sweetness into focus. The coffee itself sets the direction; we respond accordingly.
What we’re always working towards is clarity. Not in a narrow sense, but across the full spectrum of flavour—whether that’s a clean washed lot with delicate acidity or a co-ferment with something more expressive going on. In every case, we’re aiming for structure, balance, and a cup that feels composed rather than imposed upon.
There’s a balance in how we work as well. We rely on data and structure, but we’re not ruled by it. Roast curves, rate of rise, and development time give us a framework—but what happens inside the roast still has to be read in real time. Sound, smell, colour, momentum. Experience matters just as much as the numbers.
That balance is important to us. It means we can be consistent without becoming rigid, and responsive without becoming unpredictable.
Each coffee is treated on its own terms. Some profiles are built and refined over time, others are deliberately held back to preserve a sharper expression of origin character. We’re not trying to make every coffee behave the same way—we’re trying to let each one behave with individuality.
After roasting, everything returns to the cup. We cup regularly, to make sure what we’re seeing in production matches what we intended. Ensuring each coffee delivers its best qualities with consistency - making it a reliable companion for both home brewers and baristas alike.
What we’re left with is coffee that feels true to where it came from, and considered in how it arrives to you.
To us, a well-roasted coffee is one that represents the flavour of its terroir, producers and provenance. One that is balanced in the cup, sharing its individualities and leaving a lasting mark in your memory as one of those small, lovely moments you come back to.
